Island Jumble

Group A

  • 1 bunch bok choi, sliced and steamed
  • 1 cup broccoli florets, steamed
  • 1 green pepper, slided
  • 1/2 red onion, thinly sliced
  • 1/2 cup shiitake mushrooms, sliced

Group B

  • three bean salad

Group C

  • coconut milk
  • red chilies
  • grated ginger
  • snipped lemon grass
  • soy sauce

1. Combine bok choi and broccoli, and add to box. Top with remaining sliced
Group A ingredients.
2. Top with three bean salad.
3. Add sprinkling of cocoanut milk, chilies, ginger, lemon grass and soy sauce, as
desired.

Roasted Monk Fish with Dijon Cream Sauce and Sauteed Spinach

This recipe is taken from the Breakfast & Dinner Cookbook.

Makes two servings

  • 2 monk fish filets (about 7 ounces each)
  • 2 tablespoons Dijon mustard
  • 1 tablespoon grainy (Country) mustard
  • ¼ cup nonfat yogurt
  • 2 tablespoons lowfat mayonnaise
  • ½ teaspoon salt
  • Pinch ground black pepper

Preheat oven to 425 degrees. Combine mustards, yogurt, mayonnaise, salt and pepper. Place filets in baking dish and spread mustard mixture evenly on filets. Bake 10 to 15 minutes, depending on thickness of filets. Check for doneness; fish will flake easily at thickest point. Serve with spinach.

Sauteed Spinach

  • 1 pound fresh spinach, trimmed and washed
  • 3 tablespoons olive oil
  • 1 clove garlic, pressed
  • Pinch of ground nutmeg
  • Kosher salt to taste
  • Ground black pepper to taste

Heat oil in large skillet over high heat. Add spinach and stir constantly for 2 minutes. Stir in garlic and cook for
another 30 seconds. Season with nutmeg, salt and pepper. Serve with fish.
